Ceremonial grade matcha is made from the youngest, first-harvest leaves of the tea plant, shade-grown for 3–4 weeks before picking. It has a vivid green colour, naturally sweet flavour, and smooth texture. Culinary grade is made from older leaves, has a more bitter taste, and is designed for baking or blending into recipes — not for drinking on its own.

Yes. One 2g serving of Ayumi ceremonial matcha contains approximately 35mg of natural caffeine — roughly half that of a standard cup of coffee. Importantly, matcha also contains L-theanine, an amino acid that slows caffeine absorption and promotes calm, focused energy rather than a jittery spike. Most people find matcha's caffeine effect noticeably smoother and longer-lasting than coffee

Sift ½ to 1 teaspoon (1.5–2g) of matcha into a bowl or cup. Add 60ml of water heated to 80°C — not boiling, as boiling water damages the amino acids and creates bitterness. Whisk in a rapid W or M motion for 20–30 seconds until frothy. Drink immediately, or add 150ml of warm milk for a matcha latte.

Shizuka has been growing tea since the 12th century and is widely considered the birthplace of Japanese matcha culture. The region's unique combination of morning mist, warm afternoons, and mineral-rich soil creates optimal growing conditions. Shizuoka matcha is shade-grown for longer periods than most other regions, producing leaves with higher chlorophyll and L-theanine content, which translates to deeper colour and richer flavour.

Store your Ayumi matcha in its original resealable pouch, sealed tightly, in a cool, dark place away from direct sunlight, heat, and moisture. A kitchen cupboard away from the stove is ideal. Avoid storing in the refrigerator unless the pouch is completely airtight, as condensation can affect quality. Properly stored, opened matcha stays fresh for up to 3 months; unopened pouches last 12 months.

Matcha contains EGCG (epigallocatechin gallate), a catechin antioxidant that research suggests may support metabolism and fat oxidation, particularly when combined with exercise. It's not a weight loss supplement, but as a replacement for high-calorie beverages or sugary coffee drinks, matcha is a genuinely low-calorie, nutrient-rich option. One serving is approximately 5 calories.

However, if you are highly sensitive to caffeine, we recommend starting with half a serving (1g) and seeing how you respond. Matcha is not recommended for pregnant women or those with severe caffeine sensitivity.
